With 10 people in our family.... we've perfected many crock-pot meals.
I do the roast too. Others include:
--BBQ Chicken for Sandwiches. I buy the frozen chicken breast or tenderloins.... don't defrost just put in crock pot.... w/ a bottle of your favorite bbq sauce. When it's all done -- I shred it up and serve on sandwich rolls. Pair w/ a salad and you are good to go.
--Orange Honey Glazed Chicken. I use the same chicken as above, but instead of BBQ, I put in a can of frozen orange juice concentrate, honey (sorry, I don't measure anything, lol... maybe a cup? I love honey!).... dash of dry mustard (maybe 2 or 3 tsp).... you can add some minced garlic and a little soy sauce (or not - I've done it both ways). It makes a yummy glaze. Serve over rice.
--This recipe has circulated on Facebook - I've yet to try it but it looks good. It is a breakfast casserole... but it has eggs, sausage, cheese, etc - you could easily do for dinner.

--Golden Mushroom Beef Stew: Beef stew meat.... Couple of cans of Golden Mushroom Soup.... 1 beef bouillon cube, dissolved.... Cream Sherry - as much as you like (we like a lot) -- maybe 2 cups.... Mushrooms (if you like, you don't have to have).... Throw in crock pot and cook. Serve over egg noodles. Makes the house smell really good....
