With celiac, they say you are "gluten sensitive" or "intolerant" when they can't get a definite diagnosis from blood or biopsy but you respond to the gf diet. They seem stuck in their standard measurements of damage/no damage. There is more and more discussion about this due to people like you who obviously respond to a gf diet.
I think crohn's diagnosis is similar - they look for specific damage and if they don't find it, then you don't "have it" - yet. I looked back at the report from my first colonoscopy/endoscopy from 5 years ago when they found celiac but not crohns. There were "white spots" in my terminal ileum that they decided they were nothing to be concerned about because the biopsy showed nothing - and guess where they found crohn's ulcers this year!
I guess from a medical viewpoint, they can't treat the unknown, but I do wish I had been more aware of the possibilities back then and had a follow up colonscopy much sooner.
good for you yogaprof on your success with the gf diet! It's not easy, but it can be done. The store-sold breads are pretty awful by the way - so you're not missing anything there. Try online or get a breadmaker and make your own from a Bob's Red Mill mix or something.
