I stumbled across this recipe and thought you might like it:
Warm celeriac, potato and carrot salad.
Sounds as if it would be ok on a lowish residue diet, as long as you can tolerate sour cream.

It is a good website, isn't it? I've made a few recipes from there and they work really well.
I tried to find some celeriac yesterday and couldn't :-( so if you do manage to make it, please let us know how it turns out. It sounds really healthy and delicious.
