When I was diagnosed with Crohn's disease, my mom went out and bought all the books she could find. One I've found very helpful on eating is "the new eating right for a bad gut" by James Scala, Ph. D.
here's a list of some foods that the book says most people with IBD can eat without causing flare ups:
Cereal: oatmeal, cream of wheat, cornflakes, bran flakes, malt-o-meal, special K, product 19, cheerios
Dairy products: lactaid milk, low-fat and nonfat(skim) milk, yogurt, aged cheese, cottage and soft cheese, soy beverages
Eggs: only poached, soft boiled and hard boiled
meat: only lean and trimmed of fat, avoid red meats when possible
fish: tuna, swordfish, salmon, halibut, flounder (do not fry any)
shellfish: scalloped if broiled or poached
poultry: white meat, not fried, skin removed
vegetables: a lot to list, but makes sure you remove skins when possible and boil or steam them to break down the fiber matrices
fruit: peel them
Grains: boiled white and brown rice, breads and rolls without seeds. no seeds of any type.
Processed foods: canned fruit, apple sauce, canned vegetables, baked beans
