I think it's less what you should eat than it is what you SHOULDN'T eat. I spent weeks researching and found no definite answers. I would avoid most dairy, at least until the flare calms down some.
Assuming you can tolerate gluten, Canned Low Fat/Low Sodium chicken noodle soup (avoiding all veggies except mushy carrots), Crackers. Grilled Chicken/Turkey also sits well with me, can't put much on it but I will sometimes but it on bread with a little mayo. The only time I really get pain is when I eat veggies and then it's just cramps for a night.
I don't have many problems with eating-related pain so much as nausea, but when my UC was at it's worse anything I ate or even drinking water gave the same amount of pain. If everything gives you pain you might as well try and get as many calories in per bite. Peanut butter on crackers or toast, Mayo and some kind of meat on white bread (more calories less fiber than other breads).
When I was at the hospital I was given a Fruit-flavored drink made by Boost. Had 250 calories a drink in a little juice box, was good to get in extra calories when eating nauseated me or gave me pain. I think it was called Resource Breeze or something. If you want a change of pace from Ensure.
