Is it possible to get an emergency referral to a dietician to get a supply of elemental diet? I would have thought your doctor would have at least arranged an enterel feed as a matter of urgency (perhaps a nasojejunal line feed?) for you in this situation. I frequently suffer from flaring inflammation in the same areas as you've mentioned and have never been left to fend on things like Ensure etc. In fact I recommend avoiding Ensure - it's very rich and even diluted it can cause people to feel more ill if there's upper GI issues rather than lower down. In regards to diet I would recommend avoiding milk and milk-containing products as it actually increases stomach acid secretion which will make things feel worse.
In the mean time rice is a good standby (possibly even pureed with a little hot water to a congee-like consistency) as is cream of rice cereal, avacado smoothies (room temperature though whilst things are sore!). I have a list somewhere of soft&bland foods that my dietician wrote up for me which I'll go hunt out for you.
