Sounds like you are on the right track then! I am four months into the diet, and have been able to add rice back into my diet (!!!!!). My inflammation got lowered dramatically, bleeding stopped, nausea and cramping stopped, so I tried potatoes, and that didn't work out (slow decline of bowel health). Went 100% SCD again for a few weeks, then tried rice and it didn't adversely affect my health! So from my experience at least, the diet can be modified successfully (though you can argue that it is no longer truly SCD).
When I told my doctor I was on SCD and was feeling significantly better he thought I should stick with it and was happy I was doing better. I feel that sometime within the next year I will talk to him about reducing/eliminating the Imuran. Our doctors know a whoooooole lot about this disease, but they also have to get input from us, their patients. Don't be afraid to bring your concerns and plans up - if he/she is a good doctor they will hear you out and give their best advice!
