As for dairy, yeah, that's a separate issue from gluten. To make it even more confusing, a dairy allergy is distinct from lactose intolerance. With a milk allergy, you have an allergic reaction to one of the proteins in milk. Lactose is a milk sugar rather than protein, and some people lack the enzyme, lactase, to digest it properly. Hence intolerance but not an allergic reaction.
When people say they have problems with dairy, they usually mean milk and ice cream, and they usually mean lactose intolerance. Where I live (UK), all large supermarkets have lactose-free milk. There are also alternatives to cow's milk, such as goat's milk, almond milk, soya milk, etc. Try different things to see what suits you.
