Regarding milk chocolate...
It is not really true that Crohnies can't eat anything containing milk. What we have to be careful of is lactose, the natural sugar that is in milk. This is because as we get older, our bodies lose the ability to produce lactase, an enzyme we need to digest lactose. If we don't have sufficient lactase present in the digestive system, exposure to lactose will cause diarrhea and thus irritation to the gut.
Fortunately, there is a simple solution. Depending on where you live in the world, it should be pretty easy to buy lactase supplements at your local pharmacy. A well-known brand-name is Lactaid, but there are lots of generic brands that are cheaper. When I was in America, I tried that and it really worked - I could drink milk without issues.
However, I'm in Taiwan now and I haven't seen lactase on the pharmacy shelves here, so I have to go easy on the dairy products.
Regarding coffee...
I find that it depends on which type of coffee beans you buy. It's not just caffeine content - I've found that decaf coffee can be just as bad. Some coffee beans don't seem to bother me much, while other brands will really set my gut on fire. I don't have a simple rule on how to determine which ones are good and which are bad - trial and error is my method. I'd probably be better off drinking no coffee, but I'm kind of addicted, and fortunately I've found one brand that I tolerate well. It's no use for me to tell you what brand that is unless you also live in Taiwan (since it's not sold abroad).
