Diet is tricky... Some people (lucky ones) actually do see great success from dietary changes while others do not. It's all over the map really.
I think rather than get into arguments on here over this diet and that diet, gluten free, real food, raw food, SCD and all that fun stuff - perhaps the better answer is simply that with IBD (both Crohn's Disease and Ulcerative Colitis) there are defects in our barriers. So think 'leaky gut' type thing. Because of this issue many things can get across (diffuse through) our mucus and epithelial barrier and cause a reaction, whereas in normal healthy people with tight barriers and proper mucus structure they cannot. These same dietary or bacterial sourced antigens do not cause reaction in them.
The issue is that because of this everyone is going to be slightly different, and the same individual can have responses that vary over time and periods of remission and active disease.
So the bottom line is perhaps give it a go, as you don't have much to loose. Stop if it makes you worse, continue if you feel better and maybe give it one more week if you see no difference.
It took me forever and then some to nail down a few specific things that consistently cause issue. Eliminating these from my diet brought great relief. But I am sure there are many more that I have missed or cannot differentiate. Eg - cooked carrots versus raw carrots. I am fine with cooked, but raw kills me - does not matter if they are straight out of the garden out back or from the pesticide rich produce section at the discount grocery store. Raw tomatoes I am fine - cooked tomatoes do me in. The list goes on and on....
As for him 'curing you'... what he is not telling you is that those that find success via diet seem to be locked into maintaining that diet indefinitely. Which is fine I guess... I mean if you can lesson your meds and don't mind the dietary restrictions then that's awesome.

If you really feel like stumping him simply ask him this: How many people following his diet have gone on to eat whatever they want symptom free for the rest of their lives? I promise the answer will be zero...
