I have been eating sushi for many years and will say that most of it is raw.
Cooked: Egg - Tamago, Eel(Unagi), Shrimp(Ebi). Tempura which is battered is cooked and some people include it in the Sushi Menu.
Just about everything else is raw.
One of the greatest risk are parasites which live in uncooked food.
I personally continue eating Sushi and Sashimi, it is very mild on my stomach.
