Yes, that's normal for some people. Coffee has a well-known laxative effect, but not everyone gets it. I don't, so I can drink a cup of black coffee without any issues.
It obviously makes sense not to drink or eat anything which exacerbates your symptoms, but if you think just stopping drinking coffee is enough to make Crohn's go away you are living in a bit of a dream world. Also, there's no reason why intensive exercise would make Crohn's go away either. Exercise is good for your health, but it's not going to have any effect on gut inflammation.
