OK so how do you get your bananas to ripen when you need them???? I only eat bananas that are ripe so they are soft, but if I wait 2 seconds to long, they are brown. Having nasty muscle cramps and tingling in my hands---I know my potassium is low. Gotta eat the monkey fruit, but I can't get them the way I like. The store ones are still a little green so I have to wait to eat them, then I end up tossing them because I miss the "good to eat" period. Any ideas other than making sure they hang instead of lying on the counter??? Can you force them to ripen like you do peaches? Can you keep them from browning someway?

Actually potatoes have more potassium in them then bannanas

You can put them in a brown paper sack to ripen in a day or two. I don't know if I'm making this up but have maybe heard to try sticking it in the microwave for 10-30 seconds? It's worth a try!

MMM....thanks I did not realize that! I am going to the store now and get banana and more potatoes. Maybe that's why I was craving frenhc fries this last week!?!?!?!

you can also freeze bananas when they start to get brown. then make bread with them :) Karen

Searched the web -
Why would you want overripened bananas? One, they're sweeter, and two, very ripe bananas make the best banana bread! If you want to ripen your bananas in a hurry, there are a couple ways to do so.
1.) Put them in a brown paper bag for a couple days. To speed the process, add an apple to the bag.
2.)Use the microwave. Pierce the skin of the banana in a few spots, then heat on high for 1-2 minutes with the skin on.
Also, if you find yourself with too many bananas, put them in the freezer, skin and all. To thaw them out, just leave them on the counter at room temperature.

Speed-ripen bananas in the microwave. Pierce with a fork on outside in a few places making sure you reach the banana. Then, microwave whole, in peel for 1 1/2 minutes on high.

I think I have heard somewhere that you can put them in the fridge (once they are ripe) and they will not turn brown so fast.... I'm not positive though.... I'm not a big banana eater. Good Luck,

OK MMM, now I am craving fries again. I'm going to cave in and make some homemade salt and garlic fries tonight. Yes, the tummy hurts, but the will power is weak
Maybe I'll just pan fry some slices without the oil.
