What I understand is that Elaine Gottschall ("Breaking the Vicious Cycle), a biologist who studied the effects of foods and bacteria on the intestines at the cellular level, determined bifidobacterium to be unfriendly to Crohn's and UC sufferers. I can't tell you why. If you do a search on the main site, you *may* find discussions about this, though no guarantees. And no, it would not be removed during the extended cooking process.
Can you find the "Yogourmet" brand freeze dried starter down unda? It's made in Canada... Maybe you could order it in? I order mine by the case from half-way across the country to get a better price. "Fage" is another brand folks here use. Good luck!
