I'm guessing, but it sounds like you are in the UK are you Cleveland ? Because that is par for the course over here. My suggestion to you would be to start trying probiotics - what suits one person will not suit another, so you might have to try more than one variety (try a search, but don't ask me which button !) and think of trying an exclusion diet, that will undoubtedly help you find out what foods are worse for you. Imodium works short term, but may have long term disadvantages - for example, I found it made my ability to control the need to go much less.
The fact that you are bugging your doctor is good, (s)he is beginning to get the idea of what urgency feels like...
Now, feel free to phone up every day or better still, drop a note in by his/her office, saying, "Yesterday I had x trips to the toilet, spent y hours incapacitated, suffered a, b and c symptoms. Is there any chance of a more urgent appointment with the GI ?" Add a counter of how many trips you've made since (s)he last saw you, mention longterm damage like peripheral neuropathy, hypoproteinaemia (sp?) and electrolyte imbalance, and you will be paid some more attention - if only because it is in writing. You might also point out that at present you are not under the care of the GI, so a little help from your doctor until then would not go amiss in an attempt to avoid neglect of a serious condition. Eventually the penny will drop - either (s)he will do something just to get you off his/her back, or because at long last (s)he is feeling how unrelenting the pressure is upon you and your body, emotional rapport will exist where once there was merely inadequate detached professionalism.
