You sound like you are very committed, and that will serve you well! You have also done your homework, so that's great too! Preparation for this, both mental and your pantry, is very important!
As for our experience with meds, once my had been in remission for several months (7-8?) his doctor told us he could discontinue his 5ASA when we asked if it was still necessary. So yes, I'd say my son's doctor was pretty supportive. He knew we were managing it through diet, but ironically he was not interested in specific details of his diet. Maybe he knew? I guess I'll never know...
