I have been down a similar path. First thing I would recommend is to get properly diagnosed. Carbohydrate malabsorption can be caused by SIBO but not necessarily. I was Dx with Carbohydrate malabsorption via a stool test. Then I did the hydrogen SIBO test. I also was Dx with slow motility.
One thing, if you have slow motility, and you are going to do the hydrogen breath test, the normal time is 3 hours. Ask your doc to schedule at least 5 hours. The Dx of SIBO is looking for a double dip pattern, otherwise it is just Carbohydrate malabsorption. I only did 3 hours and the doc had to guess that I had SIBO.
Most folks are treating SIBO with a combo of FodMap and reflaxin (or something like that). A strong anti biotic. Even with FodMap and Antibiotic, it most frequently takes a few rounds of the antibiotic to clear up the SIBO. But most folks with SIBO see fast relief when taking the antibiotic.
As to enough energy. I have been doing low carb SCD so I burn mostly fats not carbs. I do pretty long distance cycling and I really have no issue re enough energy. This might take a few weeks, but the body adjusts. I have done a few 100 mile cycle rides, LowCarb SCD and Low FodMap. Actually adding LowFodMap is really very easy when doing Low Carb SCD. Cut out onion and garlic and all honey. Eat a minimum of low carb fruit. I make cheesecake. Take some low carb berries, just enough for flavor. Boil the berries in some water, reduce a bit then add lots of organic gelatin. Pour on top of cheesecake and freeze the whole thing. Add this to my yogurt. I get a very nice flavor and mouth feel to my yogurt with very verl low carb and fodmap.
This approach cleared up everything, so added back honey, but still eliminate/ highly reduce onions and fresh garlic
I am 3 or 4years into SCD and do not do kifer so no experience there.
