After 16 months of (worsening) symptoms and uncooperative doctors, I am finally going in for a second opinion this Friday. Anyone have any experience doing this and care to share some tips?

Haven't had to take this route, but the bottom line is, if you're not happy with the care you're getting, and losing confidence in your GI, then it's time for a change, or "second opinion". Many before you have taken this route. Hope it works out for you.

have had to go to numerous ones before I settled on a GI i was happy with. bring your previous records and any questions you have.

It looks like you are really seeking to switch doctors, instead of seeking a second opinion. I live in a small town and I went to see a Crohn's expert for a second opinion. My local GI was supportive of that, but the expert ended out kind of snotty to him so it wasn't a perfect situation.
I suggest that you ask for a copy of your medical records from your current doc and also get a copy of your relevant hospitalizations and tests. I actually typed up a one page summary of my care and treatments so the doctor didn't have to wade through mounds of records, and the doctor appreciated that. You don't have to tell your current doc you are switching until you find someone you like and decide that is the direction that you want to go. If you are in the US, you might want to get ideas for a referral from the Crohn's and colitis foundation. University Hospitals tend to have more experts than local hospitals, but if you are going to switch, make sure you see someone who specializes with IBD, not just a regular GI. following up on my last post and what Gumby said: Definitely make sure they specialize or have a strong interest in IBD. When you go to the appointments try to find one that is good at communicating/ that has a plan A and B if you can- It really helps when you are not feeling well to know what your options are ahead of time.
