I'd like to call it a 'mushroom',
snow ear mushroom would be easier for me to eat. Even though I
know that mushrooms are fungi, the word just turned me off. (I guess it's like truffles; if we called them fungi as they really are, then they'd lose their value in my opinion.) But it's great to find something that we can eat that won't bother the blood sugar! Thank you for telling us about
them.
Mip, as a substitute for noodles, you could use a vegetable peeler and peel off long strands of zucchini squash (and even use the green skin if you like). They fry up very quickly in a pan and you can use them as "noodles" in most any dish. This summer I showed my cousin how to do this and we ate zucchini noodles with pesto sauce and another time with sauteed onion slivers and a small sliced up tomato in some olive oil. She added some oregano and basil and it was very tasty.
