You are all so kind! It's been a long, busy winter with hubby retired and trying to "help out" around the house. Maybe that's where my stress is coming from

Sherrine, gotta tell you that we are all losing on this food plan, normals, Crohnie and me, the diabetic. We have been eating all kinds of beans, chick peas (humus!), black beans, red beans & pintos. We put them in salads, soup and eat them plain with spicy salt, kind of like peanuts. We spend about
$7 per family member per week on fresh produce and buy no bread, potatoes or pastas. I have to admit that I don't get tired of salads when we forgo the iceberg and make them with spinach, mustard greens, romaine and bok choy. These are salads with
character.
We peel whole carrots and make long carrot ribbons with the peeler, add fresh mushrooms and splurge on tomatoes because we deserve them. Figured we could easily spend $4.00 on a bag of chips so spending the same amount on a fancy lettuce or a few fat red peppers makes sense. It has taken some extra effort to decide where to find the best and least expensive produce but we rotate our favorite stores and we are sticking to the plan. The best part is my family's support and all my friends here who are helpful. Couldn't do it without all of you!
