I also have UC and type II diabetes. What is good for me: lean proteins - chicken, fish, cottage cheese, unsweetened yogurt, very well-cooked veggies. Moderate healthy oils, but no greasy foods. Small amounts of fruits, peeled and sometimes I need to have them cooked. I eat a lot of home-made soups also; the veggies in them are cooked thoroughly and the fiber is more digestible. I don't use so-called "diabetic" pastas because they replace the carbs with more fiber, which is hard for me. When buying special "diet" foods, use caution. Whatever they take out has to be replaced with something else, and carbs are often replaced by extra fiber or fats. Better to eat just a small amount of regular pasta and use more meat or veggies with it.
