I'm not sure what you mean by "convert when cooked". Your physician would be able to refer you to a registered dietician who can tell you about foods, glycemic index, and so on. In my experience, I can't eat some foods that others can eat because my body reacts to them with high blood sugar readings, like brown rice or whole grain bread. I may be able to eat a bite or two but not a whole portion. Each person has to find what foods work for him or her. Portion size is also important as well as daily exercise. Again, every person's body may react differently to all this and that's why we need to be more attentive to what we do now. I'm sure there are many good cook books out there. I have the South Beach diet book and have found it useful. You can check on the Web for recipes, too. And there are other members who may suggest other books.
