I need to explain a little about
one of my previous posts. Fresh vegetables are probably always better than frozen but of course fresh vegetables may be seasonal and may not stay fresh for a long time in the fridge, and not all vegetables are available frozen. I eat fresh veggies when I know I'll be preparing them within a couple of days. We eat a lot of asparagus, eggplant, mushrooms and eggplant and I buy them fresh. Not all veggies come in frozen packages but for convenience and longevity, the frozen veggies are a good choice.
