My single grape tomato plant has given me over 2000 of those sweet red beauties I eat them by the handfuls with no effect on my blood sugar levels. I pick 2-3 cucumbers every day for us to eat and I stopped counting the zucchini and yellow squash a couple of weeks ago. I'm also picking regular tomatoes, romas and yellow heritage, green and wax beans- we eat a lot of fresh veggies every day. You might want to test youself a bit, just to be sure though since we all react differently- but I do pig out on a regular basis during the summer and fall. I've already had my first harvest of broccoli, cauliflower, cabbage, lettuces, spinach and radishes- I'm doing my second plantings of these today- waiting on my sweet red peppers and eggplants....and we just brought in the first of the pie pumpkins-- they won't make it until Thanksgiving, that's for sure.
My favorite dish is caprese salad- sliced tomatoes, fresh mozarrella, fresh basil (home made/grown) and a drizzling of Greek Olive oil- perfectly balanced and perfectly delish.
There's also a recipe here from Karen(tutorgirl) - for zucchini sticks breaded with parmesan cheese and fried- Pure Heaven with fresh zukes! (Ok- I'm drooling like one of Pavlov's dogs)
