Go back to basics and start over. First, get a little notebook and start a food diary. Write down meals and snacks as well as exercise and blood sugar numbers. This will give the doctor something to go by at future visits. Then start the "Nothing white except cauliflower and cottage cheese" food plan. Just take out all of the grain based stuff. Nothing made with flour, oats, rice, wheat, barley, no grains at all for a few days. No potatoes, carrots or winter squash for a while, either. No snack foods, bread, toast, rolls, pizza crust, pie crust, none of that. Also, no fruit juices, only whole fruits. Just do this for a few weeks to see what the numbers become.
Eat meat, cheese, eggs, cottage cheese and fish (a serving of meat should be about the size of a deck of cards for a lady). Eat salad, greens, broccoli, spinach, zuchini, cauliflower, all the fresh veggies you can find, at least two to a meal. If the family is having spaghetti and meat sauce for dinner pour yours over a bed of fresh spinach instead of noodles. The same can be done with pizza toppings, scrape them off onto a salad and let someone else eat the crust. If you're making soup for the fam, take some out for yourself and use thinly sliced cabbage for noodles. Cooked down in the soup they add fiber and flavor as well as vitamin C and almost zero carbs. Let the family eat the noodles and you have cabbage.
At bedtime have a banana or an apple (including the apple skin!) covered in 1 Tablespoon of peanut butter. When you cook, use olive or peanut oil. These are monounsaturated fats and help lower your bad cholesterol and raise your HDL's. Two or three times a week share an avocado with hubby. Good fats for both of you and good for his prostate, too. Make salads interesting by adding 5 or six olives, peppers, a sprinkle of cheese, salsa, anything you would put on a taco or pizza can go on a salad.
If you have a hunger spell eat one block of motzarella cheese, one inch by one inch along with six almond or 18 peanuts. This will stop your hunger in it's tracks, not raise your blood sugar and should hold your appetite for two hours. Be sure that you are taking a multivitamin with minerals and if you are post menopausal (or over 50 for men) it should be "silver", like Centrum Silver. These vitiamins are lower in iron. Excess iron levels have been targeted in heart attacks.
After about two weeks of this you should be seeing better numbers. If you are not you should get into the doctor or at least talk to him on the phone and get your meds reevaluated. I've got to go bake, but I'll get back with you later.
