Who's mad? I hope you had a nice Mother's Day! I did. Our two kids (27 and 30) made dinner with my husband: steaks, mixed vegetables, broccoli salad and they ate some white rice. We all had ice cream for dessert; mine was sugar free. But this is interesting: the regular ice cream had the same number of carbs as my sugar-free per serving and the serving is the same size. I suppose I should do a test of each one to see if my blood sugar is indeed higher with the regular ice cream. That sounds like fun!
Well, I guess being a little more prepared before going on a trek like that would be wise. Nuts, some cheddar cheese, celery and cream cheese.
Fats in food will rarely if ever affect blood sugar. There is a theory that fat content help keep the blood sugar from spiking as it's supposed to draw out the rise but you'd have to be ready to test that to see if that's true with you or not.
