This post is 2 years old. So..... I am talking to Shorty about what to do when you first have to change the diet.
Bread- I know he will want to eat sandwiches as they are fast and quick when you are on the run. Buy the LOW CARB bread at the store with about 8 grams of carbs per slice. That will help tremendously with his blood sugar control as regular bread is anywhere from 15 to 24 grams of carbs per slice.
Stay away from potatoes, rice, real bread and pasta. Oh, NO... now it all sux.
But do eat lots of vegies, meat, cheese, peanut butter (peanut butter is a diabetics best friend) and did I mention vegies. (stay away from corn, potatoes and starchy vegies)
There are very few carbs in meat, cheese, and peanuts. That is why we are all saying to eat these types of foods.
When I go out to eat I order sliced tomatoes instead of a potato (they do not mind doing this) and will not even let them bring the bread to my table.
This and all of what everyone else has to say is just a small slice to get you started.
Oh, and come here often as lots of the folks here love to share some really good receipes that are really good to eat and are LOW CARB.
It is very important to get him to start thinking LOW CARB and eating that way.
Best to you and your husband.
