Do you think maybe it might be the potato??? I can't eat those anymore. Period. They totally make my b.s. skyrocket!!
I have learned I have absolute triggers for high blood sugar. I know every single body is different and that what send some may not others ... but mine include:
Starches of any kind including rice, potatoes, crackers, and bread. (Yes, I know there is low carb bread but that still spikes me. I find those low carb wraps to be the best bread alternative.) Brown rice still spikes me. Yams are "ok" once and awhile, but not a lot. Corn send me. Lentils and other dried beans make my bs go UP, but I don't get huge spikes.
Sugar, in ANY form, is a huge no-no (while the official stance on sugar is that it's part of a "healthy diet" is beyond me!). I think of it as poison (really, I do ... that's what helps me stay away from it!). Even the "no sugar" candies aren't 100% fool proof. Not for me.
The best way for me to keep my bs both low and stable is to eat lean protein and vegetables. Ugh. I do have berries or melon occasionally as a treat, but I rarely eat fruit anymore. My big treats are: low fat ricotta cheese topped with about 1/8 of a cup of berries; low carb fudgecicles rolled in a couple tsps of nuts, tea w/splenda. Previously I would have never though I could accept those things as true TREATS, but now they are. Oh ... and squirting canned whipped cream into my mouth? YUMMMMMMMMMMMM -
