I'm gluten free...I truly believe I am celiac, yet am told I have the wrong genes for celiac. It doesn't matter though, I am gluten free, have been for nearly 11 yrs and always will be. The tiniest amount of gluten makes me ill. All gluten free processed foods make me ill, they aren't really totally gluten free, just gluten lite, which has been proven.
I'm luckier then some in the fact that I only have to cook for myself. I eat chicken breast tenders, green beans, peas, carrots, pears, apples, peaches, cherries, grapes, almonds, walnuts...almond milk, decaf coffee and teas. I make my own almond milk and nut butters. I always react to processed milks, be it almond or coconut. I do not eat any grains, none at all, no nightshades, no cruciferous veggies, no red meat, no shellfish, nearly no histamine foods...use no sweetener or sugar other than stevia. This lifestyle has finally allowed me to lose the nasty weight I was carrying around for years.
When you first go gluten free, I'd advice you not to use any oats. Many celiac/gluten intolerants react to oats the same as to gluten. It's best to start out very mildly, nothing processed, meat, potatoes, veggies, fruits. Also to be safe, check your shampoos, lotions, soaps, and such too.
