I appreciate the post but I've seen it and how exactly do you mill and bake and buy in bulk for One person? Also I don't mill or bake and don't want to. :}

That's a good point.
I think it would be easier to follow the GF diet if the entire family would follow suit.
I'm just starting it, so I'm only at the point of exploring all the possibilities. Right now, my 'bread' consists of corn tortillas, so I have a long way to go before I tackle any issue with milling. I do enjoy baking, so maybe I can appreciate more of those hints.

Udi's is a great bread..And I am not sure where you are located, but we have Amish and Menanite (?) stores in our area, and they sell our (GF) flour at wholesale prices that are GREAT!
The other thing you need to look out for is that some are better for baking, and it depends on WHAT you are baking..like garbanzo/fava bean mix is great for like banana bread type stuff, but for pie crust I use a pecan tassie recipie that has a crust made from cream cheese..
Just some food for thought :) literally...hahahaha

I have heard of Udi's, mrsbugzy. I should give it a try.
There are some Amish stores at a little distance from here. I had never thought of buying GF flour there--what a great idea!!

SO far Udi's is the ONLY GF bread that doesn't have the consistency of an english muffin in the "real world of food"...make sense? Most GF breads are very dense and dry-ish...but UDi's isn't like that. Just make sure no matter what bread you get, keep it in the fridge.
Schar's is also very good..but for sandwiches, go Udi's

the (often) bad tasting/textures of GF bread. Will keep some in the fridge when I buy some. Thanks again! :)
