Mitzi, someone just gave me a new cookbook, Eating Well With Cancer, which has a recipe for pork tenderloin. The instructions are to cook it to an internal temp of 145 degrees F. I like the pork roasts that are pre-marinated (and have to be cooked longer), but they are salty, so I guess I will have to stick with the ones that are plain and smaller in diameter.
For me, it's a prerequisite for guys I get involved with to be able to cook. My 2nd husband was fearless in the kitchen and turned out some great meals--except when he drank and then it was a mess that ended up in the garbage.
Hugs,
Connie
