Hey, good for you!!!!! I've been doing a low carb diet since April, and I've lost 70 pounds so far. I still have another 30-50 to go, but I'm feeling great these days, and I know the foods I eat and the nutrition I'm getting is the biggest reason why my health is so much better. From the research I've read and other people I know who are living successfully with lupus, Sjogren's, RA, and other related auto-immune diseases, a low carb diet helps us tremendously. If you have any questions, or want some support as you do this, let me know - I'm glad to help. :)
By the way, be sure the oil/fat you get in your diet is the healthy kind - olive oil, real butter (not margarine), or canola oil. Also, it will help if you keep a food diary for the first few weeks. Write down everything you eat, and record how you feel after you eat. Notice if certain foods make you more energetic or lethargic, etc. I found for me the best quality proteins are fish, beef, and eggs. As healthy as chicken is, it doesn't make me feel all that energetic, so I only eat it 1-2x/week.
All the best to you...you can do it!!!!!!
