When I first saw my rheumatologist I wasn't feeling all that bad either. I had mild joint pain, a positive rheumatoid factor, and a strong family history of AI disease, so I felt it best just to go see a doctor. I almost stopped going to see the rheumatologist. I wasn't really being treated for anything, but doctor was following. Sure enough, about 1.5 years after seeing him the first time, my joint pains worsened considerably. And I was glad that I had stuck to the same doctor because by then, everything was already in place and I received treatment much faster than if I had to see another rheumatologist. I guess my point is that most doctors will probably follow you over a period of time to see if and when your sx surface. AI disease can be elusive, so it can take a while to dx. Any doctor worth their salary (very few of them actually) will not base a diagnostic decision on a lab value alone. They should take into account the sx that brought you there to begin with , and lab values over time.
