Maine, you eat, "CRAP?" Yuck! No, just kidding. That's how I read it for half a second. Yes, you're right, the carbs are no good in general. Obviously, some are better than others.
What really helped me was the GAPs diet, though once again, I have to emphasize that I tailored it to suit my needs. There are few carbs, and the food is really easy to prepare, as long as you have a juicer and a blender (though the vitamix blender {which I got refurbished}) is optimal, and makes food prep so much easier. You can just dump a chicken (or soup bones) in the crockpot at night, (I put it in the fridge and skim the fat), then make a soup the next day, and dump in some veggies. Or you can make a simple stew. Since you juice every morning, you get a lot veggies that way.
She emphasizes adding veggies to every single meal, so I just kind of throw them in. She's a big believer in eggs (egg yolks especially), and you can add them to a soup or a smoothie. They can be partially cooked. She's also a big fan of fermented foods, which you can also add to each meal.
Her squash pancakes are easy to make.
My migraines went away on that diet. However, they do come back (as does the intense diarrhea) when I cheat, as in using gluten-free flour (grains are grains).
She says to stop sugar but that honey is fine, therefore, you can have your carbs and eat them too (ie honey).
She's fine with fruit, but is against sweet potatoes, but I eat them anyway, and they haven't given me any trouble. I also eat flax, which is disallowed. As long as I avoid most grains, flours, or sugars (and that means ALL sugars except for honey), I'm fine.
Nuts are fine, and ground nuts or nut butters are even better.
Her diet is supposed to help with depression.
Maine, if you have any money, look at the vitamix blender website, and see if you can afford a refurbished blender. That's the cheapest way to get a vitamix, cheaper than Amazon. Buy, buy, buy! No, that's for Trav., ha ha. I guess I should say vitam--. The new models are outrageously expensive (there, now I've said something negative :) ).
If you can't do it, you can't do it. Just eat.
