I have read/learned/been advised by MDs that there are a few "levels" of gluten issues. One is sensitivity, in that your body produces antibodies to gluten in response to a problem. Many people with leaky gut will usually be gluten sensitive. Typically, someone who is sensitive to gluten may not have an immediate reaction to a small amount (like me) but gluten antibody levels are off the charts (me) so I really need to stay away from it entirely until those levels come down. Due to my leaky gut issues (and that is exactly what it seems—there is damage to my mucosal lining of my GI tract and food and toxins leak through it and into my body/blood stream causing... inflammation, gas, pressure, and other GI issues become anywhere from uncomfortable to unbearable and gluten plays a huge role in that.
Other people are allergic to gluten and they have an immediate reaction to it. You'll know if you're one of those people.
And then there is the celiac group who cannot even read the word "gluten" without feeling horrible. The tiniest amount will cause a notable reaction.
It's tough to know if a slice of bread once a month is BAD for you without knowing if you have a sensitivity and what it means. Not sure if you are adhering to a gluten-free diet simply to support your immune system, etc…
I understand that most people in lyme treatment need the optimal support from their immune system, which resides in the gut. So, staying away from gluten and other inflammatory type foods (sugar) just keeps things more streamlined toward the lyme support.
So—in closing to my ramble ;) you could still be having issues with gluten without an immediate reaction after eating it. On the other hand, if you're not having any reactions to it, eating a slice of bread once a month (whole grain, organic, non-GMO) is probably not a deal breaker.
One more thing…if you've been gluten-free for 3 mos. and you are craving bread madly… you might want to talk w/ doc about
a yeast/fungal issue. You really shouldn't be CRAVING it after that much deficit. I say this from the perspective of having a ginormous yeast/fungal issue and going through several different types of treatment to treat it. Until I hit the sweet spot with the treatment I had pretty bad cravings. I did a ton of research about
it and that was a common theme I read about
cravings.
