Utahgal,
I know several people personally who have had amazing recoveries with the Gerson diet. Although I don't know anybody personally with Lyme who has done it, I have seen its effects in healing MS, chronic fatigue, and cancer.
If you want to try this therapy, my suggestion would to either go to the Gerson clinic in Mexico and truly commit to the regimen overseen by a doctor there, or I would try slowly incorporating different aspects of the diet by yourself at home- I would not commit to the therapy 100 percent without medical supervision.
That being said the coffee enemas are increcibly healing and detoxifying for the liver, and the emphasis on vegetables which are raw, juiced or appropriately cooked can transform the acid alkaline balance within the body+restore depleted micronutrients which often get depleted with continuous antibiotic use.
Personally, I have found castor oil compresses on the liver, daily or 3x a week to be really helpful in starting the detoxification process. The key is to apply the compress at the same time every day, preferably after lunch, as the liver is the master organ of biorhythms and can utilize the castor oil best in this way.
Happy Healing!
