The reasoning for this is because the charcoal (any binder) will bind to anything that it comes into contact with. So yes, you can eat when taking it, but the nutrients of the food will be bound in the charcoal before the body can utilize them, and it will bind to less toxins because it's binding to other things as well.
So 2 hours before and 2 hours after eating/taking anything is the best time to take any binder for the best effectiveness with binding toxins. This is why I usually take mine when I get up in the middle of the night to use the bathroom. I just be sure to drink at least 8 ounces of water with it too, to avoid constipation issues. Binders do that to a lot of people - and it will also limit the ability of the body to rid itself of toxins.
