By the way, I just did a quick Google search for LLMDs and found one about
an hour directly south of you in Plattsburgh, New York.
It's a Doctor who had Lyme Disease herself and she's been helping patients with the condition since 2003. She's a member of ILADS and has trained with Dr. Richard I. Horowitz.
Now, I can't list her name, as she's not one of the high-profile LLMDs like Dr. Horowitz, Dr. Jemsek, or Dr. Klinghardt. But, if you use the information I provided, you should be able to find her quite easily.
Next, as for your main concerns, they are understandable.
1: Not knowing exactly what you have, assuming you have anything at all. And, if you are infected, being concerned that the symptoms may always be with you, due to being on the wrong protocol.You can consider testing through IGeneX, if you don't want to wait for an LLMD. But, testing isn't always perfect. Here's something to read:

2: The current lack of a defined plan, due to still searching for a specialist.Again, this is understandable. But, at the same time, you DID start antibiotics early. So, you ARE doing something to help mitigate certain potential pathogens. This should not be underestimated or undervalued.
If you don't find a suitable LLMD quickly enough, you could consider working with someone remotely, via Skype. There are two people that come to mind, though there are likely more. One of them is Dr. Jay Davidson:

3: Not seeing enough positive results, after six days of antibiotics. Joint pains and neck stiffness seems worse. Concerned about taking the wrong medications for potential infection(s).As noted above, in #2, you could try working with someone remotely, over Skype.
