Following, my doc has recommended NAC for me as well though I don't have this issue. I'm sure you've heard molybdenum breaks down sulfites as well? Maybe add this in conjunction while trying them out one at a time just in case. Just a suggestion...
This is the only thing I could find on the web regarding personal experience with them https://www.roadback.org/forums/topic/sulfite-sensitivity-and-n-acmsmala/

Sounds like a good question for Georgia Hunter here.
I think there were a couple mutations with possible sulfur issues.

Mino and Erythromycin with,
NAC 1000mg and ALA 600mg makes me herx, at once a day
NAC @ 1000mg 1x day is good for me, 2x day and I herx
I believe (pub med documents) NAC is a proven biofilm breaker, increasing potency of the antibiotics, causing a herx.
I really like the NAC though for detox, again proven, maybe lower doses could help

ALA moves mercury. I’m in another group we’re many people got hurt with this supplement using it this way.
What some call a herx by thiis is mercury being pulled but being dropped in a new place 6 hours later. Yes and it will make you feel like crap, espesially at this dose. We dose at much lower rates half life of 3 hrs. And do so for 72 hrs then stop for a few day rest. I’m currently dosing with 3 mg.
You might want to consider joining the FB Andy Cutler Chelation group and ask this ALA question. You’ll have 28 moderators and lots of personal testimonies warning you of the dangers of using this suppliant this way.
The mercury comes from dental amalgams for us older folks and vaccines more recently..

Also suphur is a issue for many of us. We manage it with a low thiol diet.

Is he fine with plain hot baths? Have you considered mast cell?
I don't know much about
the mechanisms here to know if NAC/ALA would be safe. I'd probably try the NAC first since it's a precursor to glutathione.
For what it's worth - I can no longer take hot epsom salt baths because they flare my bladder. Not sure if it's the heat or epsom. At any rate, I'm fine with both NAC & ALA.

I was unable to handle epsom salt baths when I was much sicker. I think my body was too toxic and the mobilization of so many toxins via that mode amplified my symptoms too much. I have always found infrared sauna helpful for lowering toxin load, have you guys tried that or had any success with it? consistent use of IF might lower the toxin load, and in turn might make it easier to start up on the baths?

Hi, I can not tolerate Epsom salt baths at all (muscle twitching and terrible muscle aches) but NAC is no problem for me. I struggle with a lot of detoxing methods but NAC is one that actually works for me. I use a product called ‘AOR Liver Support’. It contains milk thistle and NAC and it has worked extremely well for me.
