Just wanted to remind any future "diet reform newbies" that although this might be useful for Mast Cell Activation and maybe high histamine intolerance (there are tests for these) dont confuse this "safe eating" list with a general anti-inflammation diet (as Babs mentioned).

And of course food selection plays a role in the environment that bacteria and yeast live in. Sometimes what feels like a reaction is actually how these critters are reacting inside of you. Tests for these too.
And then there is the LEAP Mediator Response Test which measures different , more common mediators (cytokine immune release/response) than those playing a role in Mast Cell Activation (MCAS). We all have some odd ones that may be part of our gut and general health puzzle. As an example, cinnamon is highly reactive to some peoples immune cells. As Babs mentioned, dairy, gluten and corn can be too, ....and you might not even know this without testing.
My non-lyme experience with gluten: Eliminating gluten fully dissolved a ten year known tumor/nodule in one years time, proven via ultra sound imaging. I could not feel this inflammation inside, but it was there. No longer. Very surprising results.
