Can be very difficult. I was in your position, but my gut wad screwed up from years of eating poorly, and autonomic nerve damage. I had/have SIBO/Candida. Went from 190 lbs to 155 at my lowest. I couldn’t absorb anything, I could eat a whole pizza for dinner, which I often did, and lose weight
Finally I went low carb, all organic for 6m. Finally gut started to heal and I’m now 173 lbs.
Unfortunately I’ve started to work some sugar and stuff back into the diet and developed lose stools again, but the weight is still on and if I eat healthy for a few days the GI discomfort goes away
By the way, it’s usually SIBO that causes you to not absorb things. But I believe that sibo is usually caused by dysbiosis of the large intestine. A GI will tell you that sibo and dysbiosis are two different things (sibo is just overgrowth of the small intestine vs dysbiosis which is an imbalance in the large intestine), but I think SIBO is almost always caused by dysbiosis. Anyway, I’d get a hydrogen breath test for SIBO. If that’s positive you can try rifaximin which will make you gain weight but the SIBO may come back, at whxhh point you’d need diet
