Hi

can't sleep knees hurting bad, so i took a dar and applied arth rx all over knees feeling relief.   i wonder if any of u ladies have trouble making dinners you used to make?My daughter's birthday is coming up and she would love my meatloaf and mashed potatoes.  it hurts to peel those potatotes my hands swell up so i do that the night before and then it is very hard to mix the meatloaf together and then pour into the pans.  just wonderin

if anybody else does this ?  I can''t use fake potatoes esp on my dear daughter;s birthday wish me luck lisa.

For me, being able to actually fix a nice dinner is still a fairly new thing. I am finally starting to stand long enough & think clearly enough to follow a recipe!!! Like you, I dread peeling most anything, as my hands will remind me of my mis-behaving rather well!! *roll eyes*

For the longest of time I just couldn't follow a recipe (or for that matter any kind of a pattern) and it got so bad that I couldn't even assemble shish-kabobs. Fortunately I haven't been that bad in over a year - yea!! Although, I still have my bad days, where I can't stand on my legs long enough to fix much of a meal or my cognitive issues interfere with my reading of a recipe or just trying to get a recipe out of my head!!!

What about making mashed potatoes with the skins still on the taters?? It used to be 'the thing to do'.

or baked potatoes.... you can cut them open after they cook and take everything out and mash them (and put it all back in the skins if you want).

What about the microwaveable ones that come in a bag? They're supposed to be "real" and are already prepared????

This is just a guy's perspective, so you know ...

You only have so much energy to go around. Simplify the meal all you can. Do you want to spend your energy on dinner or actually enjoying her birthday?

I love all of u guys thanks ALL good points. Tomorrow is her birthday and friends and family will surprise her at country buffet, a restaurant known for home cooking AND if i feel good enough AND if her dad will help i'll whip it up this weekend. I was never good at much except working with challenged people and cooking, I started cooking at like 13, lived on a farm had 4 brothers and a nester plus mom dad and me, hmmm. 8 people? Every night we had this huge spread being a "girl" I had to work in the house so I became pretty good at making tasty food. Lyme does change things doesn't it!!!
