The reason for recommending no gluten when one has Lyme is that the protein in gluten grains (wheat, rye, barley, spelt, and sometimes oats (if not labeled certified gluten-free)) promotes inflammation in the body.
When fighting Lyme, one does not need extra sources of inflammation.
Good carbs include vegetables, most fruits, and whole grains that are not on the gluten grain list (see above). Refined gluten-free grains are too much like sugar and thus should be minimized or eliminated.
Many people realize they feel better going 100% grain-free, but not everyone can eat this way.

Ezekiel bread, I just said I ate it. My body doesn't seem to handle sprouted grains the same as it does whole grain (regular gluten.) Try to explain that one, I can't.
You mentioned fruits. Some people don't handle fructose very well either.
