It's called a tortilla but I guess because of the way it's made it and the batter, it's more of a thick crepe.

2 eggs
1 cup of almond milk
1 tbs of olive oil
3/4 cup of tapioca flour
3 tbs of coconut flour
1/4 tsp sea salt
Any type of milk will do, but since I'm dairy free I make my own almond milk. If tapioca flour isn't available arrowroot will also work. But if you're like me and hate lumps in the batter, make sure to sift it first.
1) In a mixing bowl, combine all the above wet ingredients (including the tablespoon of oil)
2) In a separate bowl, combine all dry ingredients together (salt and flours)
3) Pour wet ingredients into dry ingredients bowl and whisk until fully combined
4) Season your pan with olive oil ( a non-stick pan is great but a little oil is at the start is always good)
5) Heat pan on medium to medium-low heat
6) Pour 1/4 cup to 1/3 cup of batter into center of pan and spread the batter to coat the bottom of the pan. (I use a ladle as it's a good measurement)
7) Cook for 2-3 minutes or until tortilla is lightly browned on the bottom
8) Flip and cook about
1 to 1 1/2 minutes on the opposite side until browned
9) Place tortillas on a paper towel-lined plate
Depending on the amount of batter used and the size of the pan, this could make about
4 to 6 tortillas.
The tortillas are good for any meal during the day. Since I cut gluten, I use it in place of bread. I'm still on the lookout for something that looks and tastes like bread, but is gluten free. That stuff from the supermarkets just don't cut it.
