I've been vegan for ages and of course lyme has limited my diet even more. My doctor was very upset with me for not eating more. But it's been challenging because eating makes me feel incredibly sick.
I just wanted to share I came up with a solution/compromise... Bone broth is REALLY helping me these days. For some reason I can tolerate it even though it's always been important to me to be vegan.. I just treat it like medicine. It's just such a "yes" for my body.
I add lemon and stevia.
I'd say give it a try especially if you're struggling to get enough nutrients, need help calming down, and/or have digestive issues (they say it heals the gut).

Yes, bone broth is amazing!
It can be frozen in single serving cups in the freezer so that you can have it as a cup of soup each time you eat. If you make a big batch it will stay fresh in the freezer for a long time.
You can also use the broth to flavor rice and you can add some to the water to steam vegetables.
There are so many uses to it.

GOOD FOR YOU marigold33!! Bone broth is one of the most nutritious things you can put into your body. If you're in the broth groove—do the same with veggies. I have a great recipe and I drink both like tea. Wonderful now that it's cold outside.
Dr Bastyr's pH Balancing broth
1 part carrots w/ skins
1 part celery w/ leaves on top
1 part potatoes w/ skins
1 part cabbage (red or green)
Chop up veggies and place into pot, cover with water, boil 10 min. to release minerals into broth, add SEA salt & pepper to taste.
Healing98—yes! I forgot to mention that in a previous post — to use an ice cube tray and fill it up with the broth. They're ready to heat up whenever you need them.

Yay :)
Glad to have some broth friends.
May I ask your recipe/process for making bone broth? I just got one off the internet but I'd love to hear any recipes/process that people feel really work. I don't have a "slow cooker" so I just have a big pot to use...
Also, how long does it last just in the fridge?

The broth only lasts a few days in the fridge - longer in the freezer but not sure how long.

glad to see this post! I've been meaning to make bone broth for my son (well, and whole family) for about
a month now, but for some reason it's intimidated me. Never having made it before, and bones soaking…I don't know, it just seemed hard. I'm sure it's not, but that was what I felt.
This is inspiring me to actually do it! Thanks guys!

stacestar—
it is incredibly easy. You'll see. ;)
Once you do it a couple times you'll probably find ways to customize it for your family. And I guarantee you— you will never buy the pre-made stuff in the stores ever again.

Do you all mostly use chicken bones or other kinds?
Is it ok if there's a little flesh left on the bone, or should you try to get it all off?

I use chicken bones, grass fed beef bones, turkey carcasses and one of my friends uses fish bones. I haven't tried that yet. I like to have a little meat on the bones as I think it adds flavor. I also love adding in ginger, garlic and any fresh herbs or vegetables i have laying around. And if I have some, dulse flakes and kombu to get a little iodine in there and to further help with digestion. For chicken and turkey I usually leave it in the slow cooker for 24 hours but with beef bones I go as long as 36-48 hours to get all the good stuff. Great stuff and so perfect to drink during the winter!
