As I said in another thread, my daughter will often eat leftover dinner or make something non breakfasty. She makes soup sometimes, simple ones with broth, vegies, and she'll often stir in an egg or 2. She usually adds miso too, but not everyone can tolerate it.
I do better if I wait a while before eating at the start of the day, but on days like today (in the 60s and sunny) I wander outside and lose track of time, so I wait a bit too long to eat. I did it today, so now I have a coconut pancake cooking, which I'm baking in a pan. It has 3 eggs in it, so it lasts me quite a while.
I often have a taco salad, which consists of a mix of lettuces, sometimes spinach or other dark greens, carrots, tomatoes, avocado or guacamole if I feel like making it, peppers and other seasonal vegies. Then top it with some ranch dressing, salsa, cheese black beans, and some nuts or seeds or a few crumbled corn chips. You could alter it to meet your needs.
