I know this post is a little old, but I'm wondering how the OP did with experimenting with high carb?
I recently switched to a HCLF (gluten free) vegan because I was sick of not eating the carbs I love (plus my digestion was never quite good) and within three weeks I was happy, satisfied, and had normal digestion. I was losing weight!
What I also got was a serious reaction two hours after eating of tingles, inflammation, and burning down my arms and legs. I thought it might be blood sugar issues, but I tested and everything was good/normal. It's back to animal protein, fat, lots of veggies, and bad digestion for me.
