Depends on the reasoning for reintroducing them - easing them back into your diet, or seeing if you are still having reactions? My doc had me eat egg(& other food) 3 times a day for 3 days to see what foods I reacted to. But for easing them back into your diet, I would say no more than 1 every 3 days or so for a little bit, then when you feel ready, increase the "dose" slightly - say 2 eggs every 3 days or so. This gives your body a break in between since it was once sensitive to it.
The differences in taste could be just differences in what the cows eat. I had a goat (pretty much the same for this conversation), that had to have all pure alfalfa hay or her milk was, uhm, shall we say, Icky? It tasted pretty much of whatever her diet was!! Then I've had goats that could eat anything - including juniper berries(!!) and have some of the best tasting, creamiest milk ever!!!

. I believe that raw milk can be very healing for the digestive system!! And if you're going to have a treat, why not have it be one that will help heal your digestive system!!!
