Okay - for those of you far enough along to feel okay with having sugar from fruit on occasion. YUM! GAPS inspired.
Ingredients:
3 pastured eggs
1 cup almond flour
splash of apple cider vinegar (I like Braggs)
1/2 cup of coconut oil
1/2 teaspoon baking soda
cinnamon and ginger
6 ripe mini bananas
Turn on oven to 350 degrees.
Spray a bread pan with olive oil spray.
Place a dollop of homemade ghee in the bottom and let it melt.
In a blender:
Put eggs, apple cider vinegar coconut oil and spices (you could add turmeric too!)
Whirr until smooth.
Take bread pan out of the oven.
Put blender mixture in a bowl and sprinkle baking soda on top.
Slowly mix in almond flour until a cake batter consistency.
Pour in the bread pan and bake for 45 minutes.
YUM!
My spouse loved it and suggested lemon frosting... umm... no thanks! Although it might be interesting with aged goats cheese, lemon, and honey.

Sounds yummy! But I have too much inflammation to try adding bananas back into my diet at this point.

Sounds great!! I'll pass the recipe along to my personal chef....as soon as I get one! I'm horrendous in the kitchen :)

So easy; I need to try this. I assume 3 regular size bananas will work...
Might add some flax seeds (fiber, healthy fat) to balance out the carbs from the bananas.

Sounds absolutely scrumptious. I don't think I can do the bananas just yet. But I am definitely saving this recipe for when I can make this (oops for when hubby can make this for me).

I think 1 1/2 bananas could work - 2 at the most. I kind of eye ball it. Traveler and Krimpet- it is just as yummy substituting the banana with squash. I like to roast the squash first in a bit of olive oil, cool it, then dice it up. I've been using the yellow crookneck squash and baby zucchini. When I use squash I add turmeric to it. YUM! Cool. Perhaps I'll try it with the squash in the interim, but I definitely want those bananas later (lol).
