I've not heard of low digestive enzymes production and low stomach acid causing Celiac disease??
Celiac is a genetic disorder but the age of onset varies....it's thought that it can be triggered with intestinal surgery. But not everyone with celiac has had GI tract surgery...so other 'things' must trigger it as well.
Our son had pyloric stenosis surgery...and he has Celiac (undiagnosed for 14 years)
My husband and I both tested for celiac and do not have elevated antibodies for it.
I've read it is possible for celiac disease to cause low stomach acid - if you're not adhering to the diet. it messes up your GI for sure.
